Easy Low-Iodine Diet Pasta Salad Recipe

This scrumptious summer recipe shows that restricting the amount of iodine in the diet for a period of 2 weeks does not need to be overly challenging.

Patients diagnosed with thyroid cancer must often alter their diet in preparation for a radio-iodine scan or treatment. This scrumptious summer recipe shows that restricting the amount of iodine in the diet for a period of two weeks does not need to be overly challenging.

Ingredients

  • 6 oz Spaghetti, or other pasta
  • 1 Garlic clove, minced
  • 3 tablespoons Onion, minced
  • ¼ cup Vegetable oil
  • ¼ cup White vinegar
  • 1 tsp Sugar
  • 1 tsp Oregano, dried
  • ¼ tsp Black pepper
  • 1 tsp Salt
  • 1 pkg Pea pods, thawed
  • 1 cup Garbanzo beans, cooked
  • ½ cup Corn, thawed

Instructions

Cook, drain and rinse pasta. While pasta drains, sauté garlic and onion in oil until tender.

Combine pasta, sautéed garlic & onion, beans, corn, and pea pods in a large bowl.

In a new bowl, combine and mix vinegar, sugar, oregano, salt and pepper. After the sugar and salt are well dissolved, pour over pasta & vegetables. Mix well and refrigerate 6 hours before serving.

Note: Pea pods, beans, and corn may be substituted with any vegetable you may not have on hand. If you are using vegetables, it is a good idea to blanch them.
