Best Iodine Free Belgian Waffles

This recipe for low iodine diet waffles is so easy to make yourself. You could top these tasty treats with fresh fruit, powdered sugar or maple syrup!

The First Appearance of Belgian Waffles

Belgian waffles were first introduced to the United States by a Belgian named Walter Cleyman at the Century 21 Exposition in Seattle in 1962, and served with whipped cream and strawberries and sold for $1. It wasn’t until they appeared again at the 1964 New York World’s Fair at Flushing Meadows Park in Queens, New York City, where they gained popularity.

In this thyroid treatment-friendly take on the iconic recipe, we modified the ingredients to conform to a low-iodine diet.

Ingredients

  • 3-4 Egg whites
  • 2 cups Flour
  • 1-½ cups Water
  • ¼ cup Apple sauce
  • ¼ cup Coconut oil or Vegetable oil
  • 1 T Granulated sugar
  • 4 tsp Baking powder
  • ¼ tsp Iodine-free salt (optional)*
  • ½ tsp Vanilla
  • ½ cup Maple syrup

* Use kosher options or non-iodized, non-sea salt (like Morton’s table salt).

Makes about 6–8 waffles.

Preparation

Preheat your Belgian waffle iron.

Blend egg whites in a blender (or with a mixer) until fluffy. Add all other ingredients and mix together for about 20–30 seconds, until you form a lumpy batter. Let the batter rest for 1 minute. Note: Do not over mix, as it will result in very firm waffles.

Heat maple syrup in the microwave for 20 seconds. Place it on the table.

Add ⅓ cup of batter to your waffle iron. Follow the directions for your waffle iron. One waffle usually takes 3-4 minutes to cook to a golden brown.

Waffle Cooking Pro-tip: It’s all in the steam!

Another way to make the perfect golden brown waffle is to watch the steam escaping from the sides. If you notice the steam has decreased or nearly stopped rising from the waffle iron, the waffle is ready.
