Ingredients

Flax Eggs

  • 2 Tbsp Flax meal
  • 6 Tbsp Water

Fig Bread

  • ½ cup Maple syrup
  • ¼ cup Olive oil
  • 3 ripe Bananas, mashed
  • 1–½ cup Fresh Figs, stems removed & chopped into pieces
  • 1 tsp Cinnamon
  • 2 cups All purpose flour
  • 2 tsp Baking powder
  • ¼ tsp Kosher salt, or non-iodized table salt *
  • ¾ cup Walnuts, crumbled
  • Extra Figs for topping

* Use kosher options.

Flax Eggs

Mix flax meal with water and let it sit for 5 minutes.

Fig Bread
  1. Preheat oven to 350°F and line a 8×4 inch loaf pan with parchment.
  2. In a large bowl, combine flax eggs with maple syrup and olive oil until smooth.
  3. Add in mashed banana, chopped figs and cinnamon.
  4. Add in flour, baking powder and non-iodized salt. Don’t over mix.
  5. Fold in walnuts and pour the batter in the prepared pan.
  6. Slice 1 or 2 figs and place them on the top. Gently press them down with your fingers.
  7. Bake for 1 hour or until an inserted skewer comes out clean.
  8. Remove from the oven and let it cool for 10 minutes. Then remove from the pan and let it cool completely before serving.

Yields approximately 10 servings.
